Masala Chai

Masala chai is a tea beverage made by boiling black tea in milk and water with a mixture of aromatic herbs and spices. Originating in South Asia, the beverage has gained worldwide popularity, becoming a feature in many coffee and tea houses

Here is our easy masala chai recipe that will make you a star of your home, be it entertaining guests or just for a beautiful start to the day!

Ingredients (Makes 4 good sized cups!):

  • 1 tsp ginger powder
  • 4cm Cinnamon Bark, broken up.
  • Green Cardamom Whole x 4
  • 1/2 tsp black peppercorns
  • 3 whole cloves
  • ~850ml water
  • 2 Table Spoons of Black Loose Leaf Tea
  • 125ml (1/2 cup) full cream milk (Soy, Almond or Skim can also be used)
  • Mishri (Crystal Sugar) to taste (can use normal sugar)

    Instructions:
    • Place ginger powder, cinnamon, cardamom, peppercorns, cloves in a mortar and pestle and crunch them until cardamom has opened up, cloves/pepper are crushed and Cinnamon is further broken.  Add items to the tea pot (can be in strainer or in pot)
    • Add 2 table spoons of black tea leaves to the pot and also mishri to suit your taste. 
    • Boil the kettle of around 850ml - 1L of water and pour into the tea pot full of spices and tea.  Stir well. Cover the lid and let sit for 5-7 minutes to allow the flavours to infuse.
    • Step 4
      Add milk, stirring until a nice tan colour.
    • Step 5
      Serve, either using a strainer when pouring, or if you are using a internal strainer, then simply pour and enjoy :).

    MA KA TIPS!

    1.) Roast all the spices (lightly) and grind together.  This brings out the most flavour and also extends the shelf life of the spices. This can then become your very own ready to boil chai spice!
